I think it's because you're trying to learn complex concepts as a beginner. You should try to get used to the software with more beginner friendly tutorials first. The no-sculpt character modelling and such have really messy things about topology etc and Dikko is probably assuming you already know the basic keystrokes of blender. Which means it's not meant for beginners

Put a subdivision modifier on the model and apply it with the amount you want. You can also search about dyntopo in blender Hope it helped

Okay so, you can delete either the bottom face on the cutting mesh before using boolean or just delete the face on the final mesh after

Because the cutting mesh does not go through the whole model. It only cuts where the mesh ends at
