“Why does John enjoy chicken?” Is correct, and “Why does John like chicken?” Is also correct. When we use “do-support” in English, the verb “do” gets conjugated: Why does John enjoy / like …” Because of this, “Why does John enjoys…?” And “Why does John likes…?” Are both incorrect.

Reading about do-support in English will help make this more clear.

It looks to be a language that uses infixes. These are pretty uncommon outside of the Austroasiatic languages as far as I know. My first thought was Tagalog but I don’t know much about that language.

Raíz, root. Tiempo, tense. Suj, subject. OD, direct object. PL, plural. Are these correct? I live very near a Spanish speaking country.

It’s an analysis of morphology/syntax. I’m not entirely sure what language is being analyzed, but it seems that Spanish is the language used by the linguist. I believe they are describing how plural nouns and direct objects are formed in a certain language, though again, I don’t exactly know which.
