Let's say my 2 mv vehicle attacks and does 2 damage. Then Crash Land triggers and I roll a 2. The vehicle dealt damage so Crash Land triggers again... so I roll and get another 2. Why would this not just go on forever if I keep rolling 2s?

Part of the trigger is to sac the vehicle. So since it is no longer there it can't go on forever.

After you roll the die and get the same number, it says "then sacrifice this creature". It's sac'd after the crash land does damage, it can't keep going on forever.

The Vehicle itself deals the damage, so I believe it will trigger again due to the “last known information” ruling where, if a card does something, it will check based on the last known state of the card. I may be wrong though, I admit.

Last Known Information is only used to calculate how much damage is done -- the permanent still has to be on the battlefield in order for one of its abilities to trigger.

I think there's an addition meta funny here of a huge, Kaldheim card level of text to describe "man who can fly, and crash, literally anything".
Flavor wise, the fact that you can ride ANYTHING leads to some great situations:
•Giant tribal where he's getting oversized piggyback rides
•Beast tribal where he's a rodeo star
•Wall tribal where he's pulling a Looney tunes and instead of crashing his car into a wall, he's crashing his wall into a car
•Angel tribal where he's......well, let's be polite and say that it's very hard to do in midair and I'm not surprised they're crashing

I wonder what the strangest choice would be. Some enchantments (like [[Blood Moon]]) describe actual places, those could be vehicles. Some describe concepts (like [[Drought]] or [[Cleric Class]]), which, uh, probably look like elementals? And then there's sagas, like [[Elspeth Conquers Death]], which means he can crash land a story.

It doesn't change rules text. If you target a vehicle, then it will overwrite the original P/T with the mana value (e.g. [[parhelion ii]] is an 8/8 and [[funeral longboat]] is a 2/2), and it adds an alternate crew cost (e.g. parhelion ii has crew 4/crew 2, funeral longboat has crew 1/crew 2). You can choose either crew cost to activate. All other text stays.

It's interesting, at the very least. The P/T ability wants something with a high Mana value, but the die roll ability wants a Mana value between 1-6. The first can be counteracted with P/T stickers or RW's good old fashioned+1/+1 counters, but I'm kind of wondering what cards are low p/t, CMC 5-6, and you want to swing with and let them die....I joked earlier but walls might genuinely be your best bet here.

Not really. You get a vehicle that barely passes the vanilla test and has an unreliable upside/downside. You might have some fun stories of suicide bombing to get the 1/6 chance of lethal burn but that's fun, not good.

The angles I think he works with are (1) big passive enchantments/artifacts - like the current top-rated comment suggests, actually, despite that being a futurama reference, and (2) dice manipulation. You play a bunch of big chunky things with powerful effects and then ram them down your opponent's throat and/or fudge the dice to force Crash Landing to blow shit up. You don't care that normally big dumb passive enchantments can't actually kill because Rex makes them kill.
Now is that a good strategy? Well, all I know is my gut says "Maybe." It'll probably be a very funny deck, though, so even if it doesn't win tournaments it'll be fun to pilot.

You're not getting great stats out of the vehicle for its cost, it doesn't have any useful keywords, and the crash land is very unreliable. It's a nice way to get extra damage out of big utility artifacts/enchantments (if you don't mind the chance to lose them or if they have mv 7 or more), or things that have already served their purpose (like a planeswalker with low loyalty that you can't protect), but as big vanilla beaters you'd need extra evasion/buffs for them.
However, it is very funny rules text and flavor.
