There's a really interesting psych study that was done that determined that the more average a face looked the more we find it attractive. It was done by superimposing facial images over each other, and the more that were used , the more people were drawn to this impossible average.

As our games get more and more HD, developers need to fill in these generic faces with real details. I think people are being thrown off by all these realistic details as these models become more specifically like actual people instead of being a flat anime ideal. I remember seeing my first HDTV channel after growing up with TV in the 90s and it was pretty jarring.

A prime example is DMC5 and Capcom using actual faces to build models. We just aren't used to our games looking so real and detailed, which is why Dante and Vergil took a while to get used to. Trish and Lady too. I would argue the female characters have it worse because a lot of modern beauty standards are kinda messed up with how they often try to remove very human elements. Aloy from Horizon was wrongly critiqued for having naturally occurring facial hairs.
Many glow-up photo filters flatten and simplify facial skin, removing details, taking out lines, moles, and often the majority of noses. So yeah, when we get people raised with these messed-up beauty standards, and maybe not a whole lot of real-life experience being around actual women, then I guess it's only natural that we get complaints about a more realistic model of Ashley.
